Fluffy little pancakes filled with blueberries —
perfect for a slow morning, a cozy breakfast,
or simply when you feel like making something sweet.

and absolutely covered in blueberries.

ingredients
4 dl flour
2 tsp baking powder
2 tbsp sugar
¼ tsp salt
3 dl milk
1 egg
2 tbsp melted butter
1 tsp vanilla extract
2.5 dl blueberries
Butter or oil for cooking
how to make them
In a large bowl, whisk together the flour,
baking powder, sugar and salt.
In another bowl, whisk together the milk,
egg, melted butter and vanilla.
Pour the wet ingredients into the dry
ingredients and gently mix until just combined.
Don't worry if there are a few small lumps.
Gently fold in the blueberries.
Heat a lightly buttered or oiled pan over
medium heat.
Pour a small amount of batter into the pan
for each pancake.
Cook until bubbles begin appearing on the
surface and the edges look set, then flip.
Cook the other side until golden and cooked
through.
Repeat with the remaining batter.

Don't press the pancakes down with your spatula!
Let them stay fluffy while they cook. For extra
blueberry goodness, add a few fresh blueberries
on top when serving.

I love making these on slow mornings when I don't
really have anywhere to be. They're sweet without
being too sweet, and somehow blueberries make
breakfast feel a little more special.
Fresh blueberries are my favourite, but frozen
ones work too — just don't thaw them first!

There is something about making pancakes in the
morning that makes an ordinary day feel a little
slower. Maybe it's the smell of butter in the pan,
or having nowhere to rush off to. Either way,
these have officially earned a place in my little
collection.

powdered sugar, or whatever makes your breakfast
feel a little more special.
